I had a great Mother’s Day weekend. I spent some quality time with my family AND I got to enjoy this amazing Chocolate and Cherry Trifle. Of course I had to fight off demands for some of the donuts for three days, however the pudding was hiding in the back of the fridge so nobody bothered that. This week I’ve got, what I think is a unique twist, a chocolate doughnut and white chocolate pudding trifle.

We were long overdue for pictures. I totally dropped the ball for Christmas and Birthday photos. Yes, I’m one of those moms that must document all the big events with photos. I was so bummed that I just didn’t make the time to go do them.

After the photos we met up with a friend and had a great lunch together. We sat outside and enjoyed the open air and our sweetened ice tea. It was a great lunch which ended with perfect timing – minutes before a downpour!

I wore a dress and decided to wear a pair of heals – you know, to look pretty and play dress up. I NEVER wear heels anymore. Like ever! I have wedges, but I haven’t worn heels at all in 2014. Sunday was the first, and boy do I regret it!

I took everyone to a little park After lunch and took some photos of them, then I went to the grocery store, the outlet mall, and Costco! My feet were on fire! I could barely walk when I got home. It felt like I had huge blisters on the pads of each foot. Ouch!

She actually volunteered to help bring stuff in from the car and she made me a little foot-bath to soak my aching feet. She made me a comfy spot outside and made sure I had my phone, some water and a pillow so I could put my feet up after they were done soaking. She took good care of her old mama!

I’m so proud of my little girl! Without her I wouldn’t have as much to celebrate.

White Chocolate Pudding. Simple, Fast, Delicious. from #DietersDownfall.comThis white chocolate pudding was delicious by itself.  You need to make sure that you stir the sugar and cornstarch together well before adding the milk. I first just dumped it all in together and ended up with bad lumps that I could not get rid of while stirring and then when it thickened it was just gross. I had to dump the first batch and work a bit smarter the second time around.

If you want chocolate pudding, just swap put the white chocolate with semi-sweet and you’ll be good to go. In fact, I’m sure you can swap it with peanut butter or butterscotch chips to change the flavor. 

White Chocolate Pudding

Bring back some yummy childhood memories with a delicious pudding dessert of White Chocolate Pudding.
Ingredients
  • ¼ cup cornstarch
  • ½ cup sugar
  • ⅛ teaspoon salt
  • 3 cups whole milk
  • 6 ounces white chocolate
  • 1 teaspoon vanilla
Instructions
  1. Whisk together the cornstarch and sugar in a medium sized pot. Slowly add in the milk, whisking as you do to avoid lumps. Cook over medium heat stirring with large spoon or spatula. Stir in the salt and cook until it gets thick and coats the spoon. Once it starts to thicken it gets thicker faster.
  2. Remove from the heat and stir in the white chocolate and vanilla. Stir until smooth and creamy.
  3. Place it into individual bowls or into one big bowl and refrigerate. If you don't want a skin to form, cover the top of the pudding with plastic wrap. Press the wrap down so that the air bubbles are removed. Refrigerate for two to three hours before serving.
  4. Top with fresh fruit, ice cream topping, coconut flakes, chocolate chips, graham crackers, or whatever you think would be great! I topped this with some chocolate whipped cream, sprinkles and a cherry.
