Fresh Peach Prosecco Cocktail
When I got done making my amazingly perfect Peach Pie, I had some yummy peach juice left over. I didn’t want to throw it away, so I figured I’d make a fun Bellini or Martini with it.
While looking around on the internet, I noticed that there were many different ways to make a Peach Bellini or Martini. Some of them had a lot of orange juice, some had more that 6 ingredients and some had things that I just didn’t have on hand.
I had some Prosecco sitting around because I’ve been waiting for just the recipe to use it with. I figured I could use this in place of Champagne and all would be great with the world.
I did not make a mash or puree of the peaches. I simply used the juices from the peaches that macerated for an hour. I had half a cup which was perfect for these four glasses.
They weren’t super peachy and over-powering. They were light and refreshing with a hint of flavor and little kick at the end. I was wondering if I should have pour the Prosecco first then added the peach juice and allowed it to filter down.
I loved the addition of the maraschino cherry at the bottom. They actually floated on top of the peach and under the prosecco. It was pretty neat and beautiful to photograph.
If you’re still not sure what to do with the juice, just freeze it until you do!

- Peach Juice (I had half a cup)
- Maraschino Cherries
- Prosecco
- Place two Tablespoons of the peach juice into a fluted glass. Add the maraschino cherry and top with the Prosecco.
- Toast!
Oh man, this is like all my favorite things in a glass. Can’t wait to have the girls over and make these!
