Did you know that there is an awesome  organization called “Cookies for Kids Cancer“? It’s a wonderful foundation that was set up by a mom who lost her son to pediatric cancer in 2007. Since then, the organization has baked thousands of cookies to raise money for pediatric cancer research. OXO is a huge supporter of the project and they were kind enough to send me a “Good Brownie Kit” of baking supplies.

Earlier this year  I helped my daughter’s school host a fundraiser for the organization. It was small and pretty modest, but we did what we could and I’m proud about that. We plan on hosting another bake sale in the Spring again. If you donate to different charities, I recommend you look into supporting Cookies for Kids Cancer.

I have many brownie recipes on this blog… I’m actually amazed at all the different ways that you can make brownies. I made these perfectly square ones in a pan like this one because I honestly can’t cut straight and even to save my life!

Once they are made, simply put them into a plastic container and leave them on the counter overnight. That is… if you can resist eating them…

Good Brownies

Yield: 9 - 12 servings

Individual Brownies are perfect to keep the kids from fighting over who got the bigger piece.

Ingredients

  • 4 oz unsweetened chocolate, chopped
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/3 cup mini chocolate chips

Instructions

  • Prepare a 9 x 9 dish with a layer of foil and spray the foil with non-stick spray. Preheat the oven to 350 deg. F.
  • Put the chopped chocolate pieces and butter into a small saucepan and melt over medium low heat. Once it's smooth and completely melted, stir in the sugar. It will be like wet sand.
  • Add the eggs one at a time and stir it until it's incorporated before adding the next one. Finally add in the vanilla.
  • In a separate bowl, mix the three dry ingredients. Add the flour mixture to the melted mixture and fold over until combined. Add in chocolate chips.
  • Pour the batter into the prepared baking dish and bake for 25 - 30 minutes. Cool in the pan and remove the brownies by lifting up on the foil.
  • NOTE - If you are using the individual square pan, simply spray the pan with non-stick spray with flour. Use an ice cream scoop to measure out the batter so that they bake up evenly. I got 10 brownies plus a half one.
