Apple Spice Cake with Caramel Frosting
Oh my Gosh! I think I died and went to Cake Heaven! This recipe was so amazingly outstanding! I LOVED it!
I wish I had more… Actually, I do have some frozen just waiting for the perfect occasion to bring it back out.
When I made the first 9 inch cake, I thought it was nice… but it didn’t jump out as a Dieter’s Downfall dessert. That’s when the second batch came into play and I made two 6 inch cakes. I used one for this cake and the other one is in the freezer. Yumm-o!

See the rest of the cake? I gave it all away. Sigh… It was actually kinda hard to do. You see, I just started a new diet {and I’m sharing all the details on Pint Sized Baker} and I really had to put.the.fork.down. Most of my desserts I give away anyway, but giving it away with the knowledge that it’s “forbidden”, it’s “unhealthy”, and it’s “fattening”, well, that kinda made me feel off about giving it away.
It’s like giving away all the baby stuff when you still think you may still want another baby. You don’t need to keep it, but it’s just so hard to let it go because you never know if something might change. Know what I mean?
For this blog, I’m not going to change how I’ve been doing my posts here. You’ll keep seeing rich, decadent desserts and I know I’ll cheat when I make them. But that’s ok. I’m doing well and staying on track and I’ve resolved myself to changing my eating habits.
With that said, this cake a A-FREAKIN’-MAZING! Whoa! seriously.
I loved the apples and the raisins mixed with the nuts in the cake and then to add the Caramel Frosting on top and all the maple-like sweetness that it gave was just beyond good.
I hope that you give this recipe a try. I hope you give all of them a try, but really, this was so good. My friends have a family of 5 and the cake whittled away in a day.

- 1 9 inch Applesauce Cake
- 1 6 inch Applesauce Cake (you'll have 1 6" cake left over)
- 2 cups dark brown sugar
- 1 cup heavy cream
- 3 tablespoon butter
- 1 teaspoon vanilla
- 2 - 3 cups powdered sugar
- Planters Cinnamon Sugared Pecans
- Bake two batches of Applesauce Cakes. You can make two full 9 inch cakes if you'd prefer. Once baked and cooled, wrap them in plastic and place them in the fridge overnight.
- Place Brown Sugar and heavy cream into a medium sized pot and cover it. Bring to a simmer to for 2 minutes, then with a wet pastry brush, wipe away any sugar crystals from the sides of the pot. Using a Candy Thermometer, cook it uncovered until it reaches 238 degrees F.
- Turn off heat and add the butter, but do not stir. Leave the candy thermometer in place and let it sit for 1 hour until the temperature comes down to 110.
- The butter will be melted on top, stir in with a spatula and then transfer to mixer. Mix for several minutes with a paddle attachment until caramel and butter come together and is less separate.
- Change the paddle attachment for the whisk attachment and add in powdered sugar a half cup at a time. More or less powdered sugar may be required depending on your desired consistency.
- Remove cakes from fridge and frost just the tops. Add cinnamon pecans for decoration.
Now I’m craving cake and I wasn’t 30 seconds ago! Darn
