Amaretto Hot Chocolate Float – Day One – Stove-Top Amaretto Pecans
This week I needed something chocolaty! I also wanted some ice cream in a bad way! I’ve had this idea of Amaretto Ice Cream for some time, but wasn’t sure what to pair it with. I finally came with the idea of a Hot Chocolate Float. Make the ice cream and add the hot chocolate to it and BAM you get this amazing dessert. And everyone knows that the perfect ice cream needs the perfect topping – Amaretto Pecans to the rescue.
Now, before you get excited about these pecans being a snacking treat, I’m sorry to disappoint you. These pecans turned out soft and sticky. They were good to eat, don’t get me wrong, but I just don’t see someone sitting down with a bowl of them.
I ended up chopping up most of them to put into the ice cream and reserved a handful to top my floats.
I think these would be an awesome addition to any sundae party! Move over boring nuts, these Amaretto Pecans are ready to impress!
Ok, it would have to be an adult-ish sundae party because I don’t think that the kids would appreciate them. Kids can be kind of particular… They don’t know what they’re missing!
The pecans and Amaretto are cooked on the stove-top until all the alcohol has evaporated leaving behind all the sticky flavor. I loved them!

Total time:

- ½ C Amaretto
- 1½ C Pecans
- 3 Tbsp Sugar
- pinch of salt
- Place all the ingredients into a heavy bottomed pot over medium heat. Mix the amaretto and sugar coating the pecans until all of the liquid has evaporated.
- Transfer the pecans to a cookie sheet lined with a silicon mat to cool completely.
- Store loosely covered in a dry (non humid) location.
